Wellness

  • Ayurvedic Dosha: The warming nature of this dry curry makes it deeply balancing for Kapha and excellent for Vata when cooked well with oil; Pitta can enjoy its earthy warmth alongside a cooling cucumber raita or plain yogurt.
  • Benefit: High-quality, lean poultry protein paired with the fiber and antioxidant power of sweet green peas.
  • Digestive Note: Cruciferous vegetables can naturally cause gas, but the fresh ginger and the specific whole spices (like cumin seeds) act as essential carminatives to stoke your digestive fire (Agni), ensuring a light, bloat-free finish.

  • 1 Wok (Sauté Pan can also be used)

Instructions

Start Cooking

Preparation

  1. Cut cauliflower florets in 1-2 inch bite-size
    0.75 lb. Cauliflower
  2. Peel and finely dice the onion.
    1 Medium Onion
  3. Peel and finely chop (or grate) the fresh ginger root.
    1 Piece Fresh Ginger Root
  4. Peel and finely mince (or crush) the garlic cloves.
    2 Medium Garlic Cloves

Cooking: Building the Layers of Flavor

  1. Layer 1: The Oil
Heat 1 Tablespoon of cooking oil in a wok or large sauté pan over medium-high heat.
The Sizzle Test: Drop a tiny piece of ginger into the pan. If it sizzles immediately, your oil is ready!
  2. Layer 2: The Blooming Phase
Turn the heat down to medium. Add the entire contents of your Gold Pack to the hot oil. Stir frequently for 10–15 seconds until the whole spices release their beautiful, roasted aroma.
  3. Layer 3: The Aromatics
Add your prepped onion, ginger, and garlic to the pan. Continue cooking on medium heat, stirring often. You will know it is ready when the onions turn translucent and the ginger and garlic lose their sharp, raw scent, taking on a sweet, nutty fragrance.
  4. Layer 4: The Spice Base
Add the entire contents of your Black Pack, 0.75teaspoon of salt, and a pinch of ground red chili (if you like a little heat). Roast gently on medium heat for 1 minute, stirring constantly so the spices blend flawlessly with the onion base.
  5. Layer 5: The Star Veggies
Add the remaining 1 Tablespoon of cooking oil to your spice mix. Tumble in your cauliflower florets. Stir thoroughly so every single piece is brilliantly coated in the spiced oil. Cover the pan with a tight-fitting lid and cook on medium-low heat until the cauliflower are perfectly fork-tender.
  6. The Garnish
Turn off the heat and scatter a handful of finely chopped fresh cilantro over the top for a vibrant pop of color and freshness.
