Wellness

  • Ayurvedic Dosha: Highly beneficial and clearing for Kapha; excellent for balancing Pitta when kept at a mild heat level; Vata can comfortably enjoy this dish thanks to the grounding oils and warming digestive spices.
  • Benefit: A low-calorie, high-fiber, and deeply hydrating vegetable stir-fry rich in skin-brightening vitamins, antioxidants, and cruciferous nutrients.
  • Digestive Note: Raw cruciferous vegetables like cabbage can be notoriously tough on a sensitive gut. Rooted in Ayurvedic principles, the fresh ginger, mustard seeds, and traditional South Indian tempering spices in this kit act as a balancing counterweight, making the cabbage incredibly soothing for your stomach while keeping you light and energized.

  • Carrots (Grated, approx. 6 oz) 1 Cup
  • Fresh Ginger Root (approx. 2 inches long) 1 Piece
  • Fresh Jalapeno 1/2 Piece
  • Fresh Cilantro (Optional, for a vibrant garnish) 0.5 Oz

From Your Pantry (Basic Ingredients)

  • Cooking Oil (Sunflower, Olive, Safflower, or your choice) 1 Tbsp
  • Salt 3/4 tsp

Equipment

  • 1 Wok (Sauté Pan can also be used)
  • 1 Lid (for wok/ pan)

Instructions

Start Cooking

Preparation

  1. Peel and finely chop (or grate) the fresh ginger root.
    1 Piece Fresh Ginger Root
  2. Vertically slit open the jalapeño and remove the seeds (unless you love extra heat!).
    1/2 Piece Fresh Jalapeno
  3. Finely chop your fresh cilantro, if using.
    0.5 Oz Fresh Cilantro
  4. Ensure your cabbage is finely shredded and your carrots are grated.
3 Cups Cabbage, 1 Cup Carrots

Cooking: Building the Layers of Flavor

  1. Layer 1: The Oil
Heat 1 Tablespoon of cooking oil in a wok or large sauté pan over medium-high heat.
The Sizzle Test: Drop a tiny piece of ginger into the oil. If it dances and sizzles immediately, you are ready to cook.
  2. Layer 2: The South Indian Tempering
Turn the heat down to medium. Add the entire contents of your Gold Pack to the hot oil. Stir frequently. Within just15–20 seconds, the whole spices will crackle and release a beautiful, nutty, and distinctly South Indian roasted aroma.
  3. Layer 3: The Aromatics
Immediately add your diced ginger and de-seeded jalapeño to the crackling spices. Continue cooking on medium heat, stirring often, until the ginger loses its sharp, pungent bite and begins to smell sweet and earthy.
  4. Layer 4: The Veggie Toss
Tumble in your shredded cabbage and grated carrots. Toss them thoroughly so the vibrant, oil-roasted spices coat every single strand.
  5. Layer 5: The Final Spice & Steam
Sprinkle the entire contents of your Black Pack, your salt, and a pinch of ground red chili (optional) over the vegetables. Mix it exceptionally well. Cover the pan with a tight-fitting lid and let it cook on medium heat, stirring occasionally, until the cabbage is tender but still retains a satisfying bite.
  6. The Garnish
Remove from heat and toss with your freshly chopped cilantro.
