Wellness

  • Ayurvedic Dosha: The light, cooling nature of white fish makes this dish exceptionally therapeutic for cooling Pitta systems; it is deeply anchoring and comforting for Vata due to the moist, steamed preparation; and Kapha benefits immensely from the metabolism-boosting, warming coastal spices.
  • Benefit: A clean, pescatarian powerhouse providing an abundance of lean, high-quality protein and heart-healthy essential fatty acids, while keeping carbohydrates exceptionally low.
  • Digestive Note: Marine proteins are highly nourishing but require an active metabolic fire to ensure their dense nutrients are smoothly absorbed without leaving you feeling heavy. In Ayurveda, our precise layering of anti-inflammatory fresh ginger, minced garlic, and warming South Indian whole spices is entirely intentional—it stokes your Agni (digestive fire), ensures maximum nutrient absorption, and completely soothes the gut for an incredibly light, energized post-meal feel.

  • Garlic Cloves (Medium) 2 Piece

Instructions

Start Cooking

Preparation

  1. Cut fish fillet into 3 equal portions.
    1.5 lb. Fish Fillet
  2. Peel and finely dice the onion.
    1 Piece Onion
  3. Peel and finely chop (or grate) the fresh ginger root.
    1 Piece Fresh Ginger Root
  4. Peel and finely mince (or crush) the garlic cloves.
    2 Piece Garlic Cloves
  5. Finely dice the tomatoes.
    2 Piece Tomatoes

Cooking: Building the Layers of Flavor

  1. Layer 1: The Oil
Heat 1 Tablespoon of oil in a wok (Kadai) or large sauté pan over medium-high heat.
The Sizzle Test: Drop a tiny bit of ginger in; if it sizzles immediately, the pan is ready.
  2. Layer 2: The Gold Standard
When the oil is hot, turn the heat to medium and add the entire contents of the Gold Pack. Stir for 10–15 seconds. You will immediately smell the roasted, earthy aroma of North Indian whole spices.
  3. Layer 3: The Aromatic Foundation
Add your diced onion, ginger, and garlic. Sauté on medium heat, stirring often. You want the onions to become translucent and the ginger and garlic to lose their raw edge, turning sweet and nutty.
  4. Layer 4: The Spice Infusion
Add the entire contents of the Black Pack, 1 teaspoon of salt, and optional red chili. Roast on medium heat for 1minute, stirring gently to let the spices "bloom" and integrate with the aromatics.
  5. Layer 5: The Masala Base
Add the chopped tomatoes and ½ cup of water. Cover with a lid and simmer on medium heat until the tomatoes break down into a thick, vibrant, and jammy masala. Remove from the pan and set aside.

Cooking: Sear

  1. Pat your fish fillets dry. Marinate the fish with the entire contents of the Silver Pack and the remaining 1 teaspoon of salt. In a skillet with a splash of oil over medium-high heat, shallow fry the fish portions for exactly 2 minutes per side to get a beautiful crust (Don't worry if it's not fully cooked through!).

Cooking: The Flavor Pockets

  1. Tear off 3 pieces of aluminum foil. Spoon 1–2 tablespoons of your cooked tomato masala into the center of each piece of foil. Lay a seared fish fillet on top, then spoon more masala right over the top to fully coat it. Fold the foil edges together tightly to create sealed packets.
  2. Place the packets back into your sauté pan, seam-side down. Cover the pan with a lid and let the packets cook on a medium-low flame for 5 minutes.
