Punjabi Rajma Masala

A 35-Minute Ritual for Deep Anchoring and Robust Plant Protein

The ultimate bowl of North Indian comfort—now effortless. Ask any Punjabi about their favorite Sunday lunch, and the answer is almost always Rajma Chawal (red kidney beans and rice). In North India, Rajma isn’t just food; it’s a deeply nostalgic weekend emotion. This soulful dish features plump, tender kidney beans simmered to perfection in a rich, thick, and incredibly satisfying tomato and onion gravy. With your Wholesome Tadka kit doing the heavy lifting, you can entirely skip the overnight soaking and complex spice-balancing, bringing this iconic, protein-packed hug-in-a-bowl straight to your dinner table in just 35 minutes.

Wellness

  • Ayurvedic Dosha: This rich, slow-simmered gravy is exceptionally anchoring, warming, and therapeutic for pacifying Vata; it is highly satisfying for Kapha due to the stimulating properties of the Punjabi spice blend; and Pitta systems can fully enjoy its rich depth by pairing it with a cooling dollop of plain yogurt or a crisp side salad.
  • Benefit: A hearty, power-packed source of clean, plant-based protein, iron, complex carbohydrates, and immense dietary fiber.
  • Digestive Note: Red kidney beans are incredibly dense and nourishing, but their heavy structure can notoriously challenge a sensitive digestive tract or cause gas if not properly prepared. In Ayurvedic cooking, the generous use of fresh ginger, garlic, and the specific whole spices in your kit is absolutely essential—they function as powerful carminatives to stoke your Agni (digestive fire), helping to efficiently break down the complex proteins in the beans so the meal remains deeply comforting, highly bioavailable, and exceptionally easy to process.

Instructions

Start Cooking

Preparation

  1. Open the can of kidney beans, transfer them to a colander, and rinse thoroughly under cold water to remove excess sodium and starch.
1 Large Can Red Kidney Beans (Rajma)
  2. Peel and finely dice the onion.
    1 Piece Onion
  3. Peel and finely chop (or grate) the fresh ginger root.
    1 Piece Fresh Ginger Root
  4. Peel and finely mince (or crush) the garlic cloves.
    2 Piece Garlic Cloves
  5. Finely dice the tomatoes.
    2 Piece Tomatoes

Cooking: Building the Layers of Flavor

  1. Layer 1: The Oil Heat 1 Tablespoon of oil in a pressure cooker (or Dutch oven) over medium-high heat.
The Sizzle Test: Drop a small piece of onion in; if it sizzles immediately, the pan is ready.
  2. Layer 2: The Gold Standard Turn the heat to medium. Add the entire contents of the Gold Pack. Stir for 10–15 seconds until the whole spices release their earthy, roasted fragrance.
  3. Layer 3: The Aromatic Foundation Add your diced onion, ginger, and garlic. Sauté on medium heat, stirring often. You are looking for the onions to become translucent and for the ginger/garlic to lose their raw edge, turning sweet and nutty.
  4. Layer 4: The Spice Infusion Add the entire contents of the Black Pack, 0.75 teaspoon of salt, and optional red chili. Roast on medium heat for 1 minute, stirring gently to let the ground spices bloom in the oil.
  5. Layer 5: The Masala Base Add the diced tomatoes and 1 cup of water. Cook on medium heat until the tomatoes start losing their skin and soften into a rich, pulpy sauce.
  6. Layer 6: The Star Ingredient Tumble in your rinsed red kidney beans and stir well so they are enveloped in the masala. Cover the pressure cooker (or Dutch oven) with a tight-fitting lid and cook on medium-low heat until the beans absorb the flavors and are perfectly tender.
Note: Add a splash more water to adjust the "soupiness" to your liking, and give the gravy a final taste for salt.
  7. The Garnish Turn off the heat and scatter freshly chopped cilantro over the top.
