Cooking: Building the Layers of Flavor
Layer 1: The Oil Heat 1 Tablespoon of oil in a pressure cooker (or Dutch oven) over medium-high heat. The Sizzle Test: Drop a small piece of onion in; if it sizzles immediately, the pan is ready.
Layer 2: The Gold Standard Turn the heat to medium. Add the entire contents of the Gold Pack. Stir for 10–15 seconds until the whole spices release their earthy, roasted fragrance.
Layer 3: The Aromatic Foundation Add your diced onion, ginger, and garlic. Sauté on medium heat, stirring often. You are looking for the onions to become translucent and for the ginger/garlic to lose their raw edge, turning sweet and nutty.
Layer 4: The Spice Infusion Add the entire contents of the Black Pack, 0.75 teaspoon of salt, and optional red chili. Roast on medium heat for 1 minute, stirring gently to let the ground spices bloom in the oil.
Layer 5: The Masala Base Add the diced tomatoes and 1 cup of water. Cook on medium heat until the tomatoes start losing their skin and soften into a rich, pulpy sauce.
Layer 6: The Star Ingredient Tumble in your rinsed red kidney beans and stir well so they are enveloped in the masala. Cover the pressure cooker (or Dutch oven) with a tight-fitting lid and cook on medium-low heat until the beans absorb the flavors and are perfectly tender.Note: Add a splash more water to adjust the "soupiness" to your liking, and give the gravy a final taste for salt.
The Garnish Turn off the heat and scatter freshly chopped cilantro over the top.
